The Farm Bakery

Baking bread and farming have always been closely connected. In earlier times, bread was baked at Großheyerhof for the family and employees, following traditional recipes for self-sufficiency.

In 2012, Bernd Schumacher revived this tradition by renovating an old barn from 1700, which became today’s farm bakery. Here, we produce our range of breads, cakes, and fine pastries for our customers at Apple Paradise.

We rely on traditional baking craftsmanship and completely avoid ready-made baking mixes and preservatives. Only natural ingredients such as milk, butter, and eggs are used in our bakery. Depending on the season, our fruit cakes are richly topped with fresh fruits from our own cultivation and/or from the region.

Our Apple Juice

Since 1995, we have been producing apple juice in Tönisvorst using apples from our own orchards. Only fully ripened apples of the highest quality are processed. Special attention is paid to the selection of varieties in order to create a juice with a unique and distinctive flavor.

In 2015, we introduced an innovative and gentle processing technology, the VaquliQ System, to further improve the quality of our juice. In this new process, the apples are pressed under vacuum and without oxygen. As a result, the color, taste, aroma, and fragrance of the apple juice are even more intense and “closer to the fruit”! Another advantage is that all vitamins and polyphenols are preserved in higher quantities.

Another special feature is our red-fleshed wild apple varieties, which we have specially crossbred. These apples are striking with their bright red color and fine acidity. From them, we produce our popular and refreshingly fruity red apple juice, red apple spritzer, red applesauce, fruit spreads, and apple chips.

Purees & Fruit Spreads

In addition to our different apple varieties, we use the VaquliQ System to process a wide range of fruits from our farm — such as apricots, sweet cherries, pears, quinces, and plums — into purees, fruit spreads, and juices. Fruits like strawberries, raspberries, blueberries, gooseberries, and currants are sourced directly from our neighbors at Obstgut Tackheide – the Schmitz family.

“Close to the fruit” is our family’s second new motto. We produce a seasonal variety of purees and up to 16 different fruit spreads that change throughout the year. We also use this system for our farm bakery: fruit spreads and juices are, for example, used in our nut bars, cookies, and cakes. Applesauce is also used in our apple turnovers and cakes.
